Granola


I love trying new recipes, so when I have time to bake, I usually try out something new.  There are some exceptions: I make the same Christmas cookies every year (Russian teacakes, Zimsterns, Thumbprint cookies) and Boston Cream pie for my mom every year.  And this granola.  I make it every few weeks.  It is so easy to make and it makes my entire house smell delicious.  Plus I need to cook it that often because I go through it that quickly.  There is no reason not to make granola, it is much better than store bought and you can make it exactly the way you like.



The recipe calls for two cups of oats, but I add almost an entire third cup. I would suggest mixing in the first two cups and then slowing adding more oats if need be. I'm sure making this with just two cups is delicious too. I also make a smaller batch because it can get a little stale.

It is basically three steps. Heat the liquids on the stove.

Pour over the dry ingredients.

Spread onto a baking sheet and bake.

Delicious!

My favorite way to eat it is with vanilla yogurt and berries.  And yes, it tastes better if you serve it all pretty like this.

Vanilla Scented Granola Recipe

Non-stick vegetable oil cooking spray
2 - 3 cups oats
1/2 cup sliced almonds
1/4 cup brown sugar
1/8 tsp salt
1/2 tsp cinnamon
3 tbsp vegetable oil
2 tbsp honey
1 tbsp sugar
1 tbsp vanilla

1. Mix 2 cups oats, almonds, brown sugar, salt and cinnamon in a mixing bowl.
2. Heat vegetable oil, honey, sugar, and vanilla in a small saucepan over low heat until warm.
3. Mix honey mixture into oats until oats are coated. Add additional oats if desired.
4. Spread on an oiled baking sheet and cook for about 30 min (until golden brown) in a 300°F oven.
