Flourless Chocolate Cake


After cooking some fancy cakes, I thought it was time to try something a little easier.  This can is a breeze to make, and takes only about 45 minutes from start to finish.  It may not look as glamorous but it's rich chocolate flavor makes it a hit.

When the main ingredient is chocolate you'll want to get high quality chocolate.  It may be more expensive but it is worth it.  Look at that beautiful chocolate.  Another thing I loved about this recipe was it required one bowl (I melted my chocolate in the microwave, not in a double boiler) and a whisk.  Hardly any clean up.  This is the kind of cake you could make any day of the week, and tasty enough that you'll want to.


Flourless Chocolate Cake

4 ounces fine-quality bittersweet chocolate (not unsweetened)
1 stick (1/2 cup) unsalted butter
3/4 cup sugar
3 large eggs
1. Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth.
2. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well.
3. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined.
4. Pour batter into 8-inch round baking pan, buttered and lined with wax paper. Bake in middle of a oven 375°F for 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate.
