Strawberries and Yogurt


This isn't really a recipe, more like a serving suggestion but it was so delicious that I had to share it. I didn't actually measure very carefully when I was making it, so these are approximates. Play with the proportions until it tastes good to you. I was lucky in that I had fresh, sweet, melt-in-your-mouth strawberries from my CSA which makes this even more amazing. I think substituting vanilla ice cream for the yogurt or using these strawberries to fill some strawberry shortcakes would also be amazing.

Strawberries and Yogurt

2 cups sliced strawberries
2 tbsp brown sugar
1 tbsp lemon juice
1 tbsp fresh mint leaves, sliced
1/4 cup chopped walnuts
1 1/2 cup Greek yogurt
1. Mix strawberries, sugar, lemon juice and mint. Let sit for 15 minutes.
2. While the strawberries are sitting, toast the walnuts in a pan over medium heat, about 5 - 7 minutes.
3. Service strawberries with yogurt and walnuts (serves 2).
